Butternut Squash Loaf

Kimberly’s Recipe

You can have this ready in 45mins and it will do for your tea break for the rest of the week.


  • 100g Butternut Squash mashed
  • 90g almond flour
  • 10g corn starch
  • 20g desiccated coconut + walnut bits
  • 0.5 tsp baking soda
  • 1.5 tsp baking powder
  • 1tsp turmeric
  • 1 tsp cinnamon
  • 1tsp nutmeg
  • 0.5 tsp salt
  • 3 eggs
  • 2 tbsp rapeseed oil


Mix well and reset for 5 mins

Pour into a loaf tray and bake for 40 mins at 200C, cover with foil to avoid a burnt top.

Let it cool on a wire rack after and serve!
